Today I wanted to share with you one of my Sunday night meals.
Ashley and I picked up a ribeye roast after church today and oh my it was so delicious I decided I must share with you - no belly should be deprived of this dinner for sure! :0)
To start, I cut up a yellow onion and a large red pepper. I put that in the bottom of my crock pot and then I took the roast, seasoned it on the outside, and then seared it on all sides in a cast iron skillet. After getting a nice brown color on all sides, I put the roast in the crock pot, added a little bit of water, and then topped it with shallots, more red pepper, mushrooms and garlic. I cooked it on low for 3 hours and then added in small red potatoes cut in half and fresh green beans. A half an hour later the potatoes and the grean beans were tender!
This meal was so delicious and easy to cook, I challenge you to try it sometime. I'm so glad we have left overs! Mmmm!
